Ingredients for 4 servings:
- 500 g leaf spinach, frozen
- 2 onions
- 30 g butter
- 250 g minced beef
- 80 g rice
- 500 ml beef broth, homemade or instant
- Salt and pepper, black, freshly ground
- 1 pinch of allspice
- ½ tsp paprika powder, mild
- 2 cups of yogurt

Peel and finely chop the onions. Heat the butter in a saucepan and sauté the onions until translucent. Add the minced meat and fry over high heat until the juices have evaporated and the meat is lightly browned. Reduce the heat to medium. Rinse the rice in a sieve and mix it with the minced meat. Fold in the spinach and thaw while stirring. Stir in the stock, pepper, allspice, and paprika powder and bring everything to a boil briefly. Simmer for 30 to 40 minutes. Hang a conical sieve over a bowl and place a coffee filter inside. Pour in the yogurt and let it drain for about 20 minutes. Pour the yogurt into a bowl. Season the spinach and minced meat mixture generously with salt and pepper. Serve with the yogurt and flatbread.
