Grilled bacon and avocado

Ingredients for 4 servings:

  • 2 large avocados, not too ripe
  • 8 slices of bacon
  • 8 sprig(s) rosemary, small branches
  • some lemon juice
  • Salt and pepper from the mill

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 15 minutes

Variety when grilling, also works in the grill pan

Halve the avocados, remove the pit, and carefully scoop out the flesh from the skin. Halve the avocado halves again and immediately brush with lemon juice. Season with a little sea salt and pepper. Top each avocado quarter with a rosemary sprig and wrap with a slice of bacon. Grill the avocado and bacon slices over medium heat for 3-4 minutes on all sides, turning as infrequently as possible to avoid damaging the tender avocado flesh and allow the bacon to crisp up. Serve as a side dish to grilled meat or fish, or as a small appetizer with a green salad.
