Grilled eggplant rolls

Ingredients for 3 servings:

  • 1 eggplant(s)
  • 2 packs of mozzarella
  • 2 cloves garlic
  • 1 tsp, leveled salt
  • 1 tsp, leveled pepper
  • 3 tbsp olive oil

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Pour the olive oil into a small bowl. Press the garlic and add it to the bowl with the pepper, then mix well. Cut the mozzarella and eggplant into approximately 5 mm thick strips and season with salt. Drizzle the eggplant strips with the marinade and spread it over the eggplant strips. Place the mozzarella on the slices and roll them up. You should make 4 rolls per serving. Thread 4 rolls onto 2 skewers each and place the skewers on the grill with the lid closed for approximately 15 minutes at 180°C over indirect heat.
