Macaroni Bambini with tomato paste sauce

Ingredients for 4 servings:

  • 500 g macaroni, actually bucatini
  • 70 g butter
  • 3 tbsp, heaped flour
  • 100 g tomato paste
  • 1 liter vegetable broth
  • 1 tsp Maggi
  • e.g. salt and pepper
  • 200 g Gouda, grated

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Straw noodles for children with tomato paste sauce like in the GDR

First, bring a large pot of salted water to a boil and cook the macaroni (actually bucatini). Meanwhile, melt the butter in a large pan. Once it’s melted, add the flour and stir constantly. When it starts to brown, add the water and vegetable stock, stirring constantly to avoid lumps. Once it reaches a light, creamy consistency, the classic roux is ready. Now add half a tube of tomato paste and season with salt, pepper, and Maggi. Stir everything together and serve. Finally, simply sprinkle the grated cheese on top.
