Grilled scallops

Ingredients for 4 servings:

  • 16 scallop(s), fresh, cleaned
  • 8 slices of bacon
  • 16 bell peppers (small, green ones, be careful, some are very hot)
  • some sea salt, coarse
  • some pepper, freshly ground, black
  • some lime juice

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 3 minutes; Total time approx. 13 minutes

the special grill skewer

Halve the bacon slices, lightly pepper the scallops, drizzle with lime juice, and wrap them in bacon. Thread the wrapped scallops and the Pimientos de Patron onto oiled skewers, alternating them. Grill over direct heat for about 3 minutes, turning occasionally. Sprinkle the Pimientos with coarse salt and serve immediately.
