Grilled salmon

Ingredients for 2 servings:

  • 500 g salmon side(s) with skin
  • 1 garlic clove(s)
  • 1 spring onion(s)
  • 1 chili pepper(s)
  • 4 stalks of coriander
  • 4 stalks of parsley
  • 25 g ginger
  • 2 tbsp honey
  • 1 tbsp soy sauce
  • ½ lemon(s)
  • 2 tbsp lemon oil
  • salt and pepper

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 45 minutes

with chili, ginger and coriander

Peel the ginger and garlic and chop into small pieces. Wash the coriander and parsley and pick off the leaves. Wash the salmon and pat dry. Squeeze half a lemon or squeeze the juice and drizzle over the fish. Season with salt and pepper. Finely grate the lemon and mix with the soy sauce, lemon oil, garlic, and ginger. Brush the fish with the marinade, wrap in foil, and chill for about 1 hour. Now wash, trim, and slice the spring onions and chili pepper, and set both aside. Preheat the oven to 200°C (grill setting). Remove the salmon from the foil, place it in the oven, and grill for 15 minutes. 5 minutes before the end of the grilling time, brush the fish with honey, top with chili rings, parsley, coriander, and spring onions, and grill for another 5 minutes. This dish tastes great with leaf spinach, for example.
