Grilled salmon on cedar wood with lime or lemon

Ingredients for 4 servings:

  • 1,000 g salmon fillet(s)
  • 2 limes or lemons, untreated
  • 150 g brown sugar

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

You will need two cedar planks for preparation. Soak the cedar planks in water for 1 hour. Preheat the grill to approximately 220°C. Wash the salmon fillet, pat dry, and cut into two pieces, each fitting on a cedar plank. Using a sharp knife, cut the fillets into sections, cutting through to the skin. Halve and slice the limes or lemons. Place the lime or lemon slices between the sections. Spread the brown sugar evenly over the fillets. Place the cedar planks on the grill for 10 minutes and preheat. Then place the salmon fillets on top. Grill everything together indirectly in a closed grill at 200-220°C for approximately 20-25 minutes. The sugar should be caramelized; then it is ready to serve.
