Ingredients for 4 servings:
- 8 pork spare ribs
- Spice mix (Magic Dust)
- 300 ml apple juice
- 50 ml apple cider vinegar
- 30 ml soy sauce
- 30 ml Worcestershire sauce
- 3 tbsp brown sugar
- 1 tbsp garlic granules
- 1 tbsp chili powder
- 5 tbsp ketchup
- 3 tbsp maple syrup

Working time approx. 15 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 2 hours; Total time approx. 2 hours 45 minutes
For the sauce, mix all the ingredients well in a pot and let it simmer. If you’re short on time, you can also pre-cook the meat in boiling water for an hour, then brush it with the sauce and grill it indirectly for about 30 minutes. Without pre-cooking, season the ribs well with the spice mix and marinate in the refrigerator, wrapped in cling film, for at least 30 minutes. Pre-heat the grill to an internal temperature of 110°C. Grill the ribs for one and a half hours at a maximum of 130°C. For a smoky flavor, you can add smoking chips to the charcoal. Then brush the ribs with the prepared mop and grill indirectly for another 30 minutes. Serve the remaining sauce hot with the ribs. The ribs are done when the meat falls easily off the bone.
