Ingredients for 4 servings:

  • 1 large zucchini
  • 1 bell pepper(s), yellow
  • 1 red bell pepper(s)
  • 1 bunch of spring onions
  • 200 g mushrooms
  • 2 tbsp olive oil
  • salt and pepper
  • 1 garlic clove(s) or more
  • 1 bunch of mixed herbs to taste (e.g. thyme, rosemary, sage, oregano)
  • Balsamic vinegar, for drizzling

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

quick antipasti version

Clean, dice, and mix the vegetables. Spread them on a roasting pan and grill under a preheated grill (250°C) for 3 x 5-minute intervals. Stir twice during the grilling process. Remove from the grill and drizzle with a little balsamic vinegar. Enjoy with grilled dishes.
