G'röstl – farmer's feast made from raw potatoes

Ingredients for 2 servings:

  • 450 g potatoes, preferably firm-cooked
  • 200 g cooked ham (shoulder ham) or bacon
  • 1 small onion(s)
  • Oil for frying
  • 4 eggs
  • salt and pepper
  • Caraway powder
  • 2 tomatoes, diced
  • chives

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 20 minutes

Cut the potatoes into even pieces (or slices). If you want the potatoes to be crispy, place them in water to extract the starch. Drain the potato pieces and pat dry if necessary. Heat the oil in a pan, add the potato pieces, and cover. Fry over medium heat for about half an hour, turning every 5 minutes. Then season with salt, pepper, and ground caraway seeds. Meanwhile, dice the ham, fry briefly, and set aside. Finely chop the onion, fry until golden brown, and add to the ham. When the potatoes are done, add the ham, onion, and tomato pieces. Heat everything briefly and add the beaten eggs. Reduce the heat and let the eggs set. Garnish with chives. Serve with salad. 600 kcal per serving.
