Ingredients for 4 servings:
- 400 g flour
- 1 packet of dry yeast
- 4 tbsp olive oil
- 2 tsp salt
- 1 tsp sugar
- 200 ml water, warm
- 400 ml milk or cream
- 5 tbsp butter
- 3 tbsp flour
- salt and pepper
- nutmeg
- 500 g meat (gyros, possibly frozen)
- 2 m.-sized onion(s)
- 2 cloves garlic
- 300 g cheese (medium-aged Gouda)
Instructions
Working time approx. 40 minutes; Rest time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 15 minutes
For the yeast dough, combine the flour, yeast, olive oil, salt, sugar, and warm water in a bowl and knead with a hand mixer or food processor. Cover the dough and let it rise for 30 minutes in an oven preheated to 50°C. Melt the butter in a small saucepan and stir in the flour. Once the butter and flour are well blended and no lumps remain, add the milk or cream and bring to a boil over medium heat, stirring constantly. Once the sauce has thickened enough, remove the pan from the heat and season with salt, pepper, and nutmeg. Prepare the gyros according to the package instructions, grate the cheese (if purchased in chunks) and finely chop the onions. Peel the garlic cloves as well. Roll out the risen dough on a baking sheet. Spread the béchamel sauce on top, then spread the gyros, onions, and crushed garlic. Finally, sprinkle everything with cheese. Now place the pizza in the oven preheated to 230°C (top/bottom heat) for 10-15 minutes. Serve with coleslaw.
