Zucchini with spicy feta cheese filling

Ingredients for 2 servings:

  • 1 zucchini, 400 g each
  • 200 g sheep’s cheese
  • 3 tomatoes, dried, marinated in olive oil
  • 3 garlic cloves
  • 3 m.-sized pepper, medium to hot, pickled in oil and garlic
  • 1 tbsp cashew nuts
  • 1 tbsp thyme, fresh, chopped

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cut the zucchini lengthwise and hollow out the contents. Cut the bottom layers lengthwise so they stay upright. Finely slice the peppers, dice the garlic and sun-dried tomatoes. Chop the cashews and thyme. Dice the feta cheese. Mix all the ingredients (feta cheese, tomatoes, peppers, garlic, thyme) and add them to the hollowed-out zucchini halves. Bake in a preheated oven at approximately 200°C on the middle rack for about 15 minutes. It’s quick to prepare. It tastes delicious and is sure to be a hit.
