Ingredients for 4 servings:
- 250 g mushrooms, fresh
- 2 tbsp oil
- 750 g pork, shredded, gyros style, ready seasoned or seasoned yourself
- 3 tbsp Metaxa or brandy
- 2 tbsp tomato paste
- 2 tbsp sour cream or crème fraîche
- 100 g cheese, grated
- some stalks of fresh herbs, e.g. parsley/thyme/rosemary etc.
- 2 bell peppers, red
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes
Preheat the oven to 200°C (top/bottom heat). Clean, wash, and finely chop the peppers. Clean and wash the mushrooms, halving or quartering them if necessary. Heat the oil in a wide pan and fry the peppers and mushrooms for about 3 minutes, then remove. Fry the meat in the fat in batches for about 5-6 minutes each. Return all the meat, mushrooms, and peppers to the pan. Stir in the Metaxa and tomato paste and bring to a boil. Stir in the sour cream. Place the gyros in a baking dish and sprinkle with the cheese. Bake in the oven for about 10 minutes until golden brown and serve garnished with fresh herbs. Serve with flatbread or roasted potatoes.
