Ingredients for 4 servings:

  • 600 g mushrooms, brown
  • 2 eggs
  • Breadcrumbs or breadcrumbs
  • 2 tsp vegetable broth
  • 1 tsp mild mustard

First, prepare the burger buns. Ideally, they’ll already be decorated by the time the mushroom patties are ready, so everything can be served hot together. Halve the burger buns and briefly toast the insides in a toaster or oven. Spread ketchup or other sauce on the inside of the buns. Thinly slice the tomatoes and place them on a paper towel so they’re not so wet when they’re added to the burger. Thinly slice the gherkins lengthwise; they’ll later become the tongue of our monster burger. Pick out the pointiest pieces of the almonds and stick them into half of each of the top and bottom buns. The burger doesn’t need teeth at the back, of course. Cut two circles out of a slice of cheese for each burger and decorate these eyes with the olives as pupils. Set the prepared burgers, eyes, tomatoes, etc., aside. Patties: Finely chop the mushrooms, onion, spring onions, and parsley. Fry the onions until translucent and add the mushroom pieces. Fry until all the liquid has evaporated. Mix the mushroom mixture with the spring onions, eggs, and parsley, and fold in the breadcrumbs until you have a well-formed mixture. Season the mixture with vegetable stock, mustard, salt, and pepper. It’s a good idea to form a very small “test patty” from the mixture and fry it first. This way, you can taste the finished patty and season it again or add more breadcrumbs if necessary. Form 4 patties from the mixture and fry them for 7-10 minutes, depending on the desired degree of browning. Place the patties on the prepared burger buns. Top with cheese, tomato, and lettuce, and add the eyes to the burger. Place the sliced ​​cucumber slices and garnish with ketchup. Use a toothpick to secure the back of the burger, allowing you to open the mouth of the spooky burger. For a vegan version, simply use vegan cheese slices and egg substitute powder.
