Ingredients for 2 servings:
- 4 slices of toast
- 1 small onion(s), finely chopped
- 4 slices of cooked ham
- 250 g chanterelles, fresh (cleaned and weighed) or from the can
- 75 ml white wine
- 200 ml broth
- 200 ml cream
- e.g. cheese (raclette cheese) in slices
- salt and pepper
- Paprika powder
- oil
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
with chanterelles and cooked ham, topped with raclette cheese
Sauté the onion in a little oil in a non-stick pan until translucent, add the chanterelles, and sauté for about 5 minutes. Deglaze with the white wine and reduce completely. Pour in the stock and reduce by half. Add the cream and reduce slightly, seasoning the sauce with salt and pepper if necessary. Toast the bread slices and place them in two small ovenproof dishes. Brown the ham slices and place them on the bread, spread the mushroom sauce over the ham, and top with raclette cheese. Grill under the hot grill until the cheese has melted. Sprinkle with paprika and serve immediately. Serve with a green salad.
