Ham – chicken croquettes

Ingredients for 4 servings:

  • 100 g butter
  • 100 g flour
  • 100 g ham, Serrano, very finely diced
  • 200 g chicken, cooked/fried, very finely diced
  • 750 ml milk, approx.
  • some salt
  • some parsley
  • Flour, egg and breadcrumbs

Instructions

Working time approx. 20 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 20 minutes

Place the diced butter in a saucepan. Melt. Add the ham and chicken. Add the flour and mix well. Slowly add the milk, a little at a time, while stirring constantly. Finally, add the finely chopped parsley. Season with salt and mix well. Place the dough on a plate or baking sheet and let it cool. Cover with foil to prevent a skin or crust from forming. Once everything is cool, cut the dough into small cubes (about 2×3 cm or slightly larger). Shape the cubes into small oval croquettes. Roll them in flour, coat them in egg and breadcrumbs, and fry them in a pan with plenty of oil. When golden brown, drain on a plate lined with kitchen paper. Garnish with parsley, if desired, and serve immediately.
