Ingredients for 1 servings:
- 2 small onions
- 1 garlic clove(s)
- 1 small chili pepper(s)
- 1 tbsp oil
- 125 g diced ham
- 2 tbsp sugar
- 1 tbsp tomato paste
- 6 tbsp balsamic vinegar, dark
- 5 tbsp white wine
- 1 can of tomatoes, chopped
- ½ tsp sweet paprika powder
- some salt and pepper from the mill
- 1 tbsp Italian herbs
- some smoked salt
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 55 minutes; Total time approx. 1 hour 5 minutes
Peel and finely dice the onions and garlic. Deseed and finely dice the chili pepper. Pour the oil into a pot and lightly brown the ham over medium heat. Then add the onions, garlic, and chili, sauté briefly, sprinkle with sugar, and let it caramelize. Stir in the tomato paste and toast slightly. Pour in the balsamic vinegar and wine and let it reduce briefly. Then add the peeled tomatoes and the Italian herbs, salt, pepper, smoked salt, and paprika, and simmer uncovered over low heat for about 45 minutes, stirring frequently. Season again and pour into jars. The ham jam makes a delicious spread, but also goes very well with barbecues. It tastes good hot or cold.
