Ingredients for 4 servings:
- 500 g pasta of your choice
- 1 small onion(s)
- 1 small bunch of parsley
- 1 small bunch of chives
- 1 clove(s) garlic
- 2 tbsp crème fraîche or sour cream
- 3 m.-sized eggs
- 200 g cooked ham
- 2 handfuls of cheese, grated, variety of your choice
- salt and pepper
- 2 tbsp margarine

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes
The best ham noodles in the world – Grandma’s leftovers
Cook the pasta according to the package instructions. You can also use leftovers from the day before. Chop the herbs. Dice the onion. Peel the garlic clove and press it through a garlic press. Cut the ham into small cubes. Heat the margarine in a pan and add the ham, fry for 2-3 minutes, stirring frequently with a spatula. Now add the mixed herbs, garlic, and onion and sauté. Once everything has taken on a nice color and the ham is slightly crispy, add the pasta and fry. Mix in a little crème fraîche or sour cream. Crack the eggs and pour them over the pasta. Fry until set. Finally, season with salt and pepper. Serve on a plate and sprinkle with grated cheese. Serve with a mixed salad and a light yogurt or balsamic dressing. My grandmother used to make this dish as a leftover dish when I was little. I think the combination of herbs with onions and garlic makes the dish particularly delicious.
