Ham noodles with herb salt and parsley

Ingredients for 2 servings:

  • some butter or clarified butter for frying
  • 250 g pasta (croissants)
  • salt water
  • 1 tsp herbal salt
  • some pepper
  • 200 g cooked ham
  • 3 tbsp parsley, fresh
  • 2 eggs

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Cook the pasta in salted water, drain, and set aside. Melt the butter in a pan, add the pasta, and spread the herb salt evenly over the pasta (toss the pasta in the butter and use enough herb salt to coat the pasta with herbs on all sides—you’ll need about 1 teaspoon of herb salt). Fry the pasta until crispy on all sides. Dice the ham and add it along with the finely chopped parsley, mix, and fry for 1 minute. The ham shouldn’t become crispy, but should remain soft. Whisk the eggs, mix with a little salt and pepper, and stir into the ham-flavored pasta. Stir frequently while frying to ensure the eggs don’t form lumps, but are well combined with the other ingredients. Leave it in the pan until the egg whites are set. Lettuce and a cold beer go very well with this.
