Ham noodles with zucchini

Ingredients for 4 servings:

  • 250 g pasta (spaghetti or spirals)
  • 200 g ham, cooked
  • 1 m.-large zucchini
  • 3 eggs
  • 250 ml tomato(s), pureed
  • 200 g sour cream
  • 100 g cheese, grated (e.g. Gouda)
  • salt and pepper
  • Oil for the pan
  • Garlic

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cook the pasta until al dente. Dice the cooked ham, wash the zucchini, and cut into small cubes. Sauté both in a little oil. Add the pasta, beat the eggs with sour cream, passata, and grated cheese, season, and pour over the pasta, zucchini, and ham mixture. Let it set in the pan, stirring frequently. This also works great with other vegetables (peppers, broccoli, peas). Serve with a green salad.
