Ham rolls filled with basil and mascarpone

Ingredients for 4 servings:

  • 200 g ham, raw
  • 160 g mascarpone
  • 1 clove(s) garlic
  • 1 dashes lemon juice
  • 2 handfuls of fresh basil
  • Salt
  • pepper
  • cream

Prosciutto Involtini

Bring the mascarpone to room temperature to make it easier to spread. Mix with the garlic, lemon juice, and plenty of chopped basil. If the mixture isn’t sticky, add a (really) small splash of cream. Season to taste with salt and pepper. The seasoning you want depends largely on the seasoning of the ham. Spread each slice of ham thinly with the mixture and roll it up. Store in the refrigerator until ready to serve. If you prefer a thicker spread, simply use a little less ham. The mascarpone mixture will firm up a bit in the refrigerator, but I recommend using a knife and fork to avoid spills when eating. The rolls are great at buffets, as a snack with wine, as an appetizer, or as a salad garnish.
