Ingredients for 6 servings:

  • 3 rolls of hand cheese, 200 g each
  • 2 apples, red, with peel
  • 1 onion(s), red
  • 1 onion(s), white
  • 100 g hazelnuts, with skin
  • 100 g raisins
  • 16 tbsp white wine vinegar (Riesling vinegar)
  • 12 tbsp oil, neutral
  • salt and pepper
  • Sugar
  • 4 tbsp apple juice

Working time approx. 20 minutes; Rest period approx. 4 days; Total time approx. 4 days 20 minutes

Halve the Handkäse and place each piece in a sealable jar, divided into four. Wash and core the apples, then cut them into 1 cm cubes. Add the diced onions. Roughly chop the hazelnuts and add them to the apples and onions along with the raisins. Make a marinade from vinegar, oil, and spices. If it becomes too sour, add a little apple juice to improve its acidity. You can vary the quantities of the marinade according to your taste. Add the marinade to the apples, onions, nuts, and raisins and mix well. Let the marinade sit for a while, then spread it all over the Handkäse. The Handkäse should be well coated with the marinade. Seal the jars and store in the refrigerator for at least 2-4 days. The longer the better. It goes very well with farmhouse bread and butter.
