Ingredients for 4 servings:

  • 1 kg beef for roasting
  • 1 cup pineapple juice
  • 3 tbsp water
  • 2 tbsp honey
  • 2 tbsp Worcestershire sauce
  • 1 tbsp brown sugar
  • 40 g ginger, grated fresh
  • 1 small can of pineapple, sliced
  • Oil and butter for frying
  • Starch flour for binding
  • salt and pepper

Working time approx. 30 minutes; Rest time approx. 18 hours; Total time approx. 18 hours 30 minutes

exotic roast beef – slightly sweet

Marinate the beef in a mixture of pineapple juice, honey, water, Worcestershire sauce, sugar, and ginger for 12-18 hours, turning the meat twice. Remove the meat from the marinade, dry it, rub it with salt and pepper, and sear it all over in oil. Be careful, though: the sugary marinade can quickly turn it black! Pour on the marinade, cover the meat, and simmer for 1-1.5 hours, basting the roast with the meat juices every now and then. Remove the meat from the pan and let it rest for a while. Top up the meat juices with a little water and thicken with starch. Slice the meat and arrange on a platter with the pineapple slices that have been fried in butter. Serve with boiled potatoes with parsley and a green salad.
