Ingredients for 1 servings:
- 500 g wheat flour
- 150 g hazelnuts, chopped or ground
- 10 g salt
- 10 g sugar
- 100 g oat flakes
- 2 packs of dry yeast, approx. 14 g
- 6 g bread spice mix
- 60 g butter, soft
- 250 g low-fat curd cheese, approx. 20% fat
- 40 g honey
- 2 eggs
- 125 g water, lukewarm
Instructions
Working time approx. 20 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 2 hours 50 minutes
Combine flour, yeast, salt, sugar, nuts, oats, and bread spice in a bowl. Mix everything thoroughly with a whisk or spoon (this step is very important). Then add the water, quark, egg, softened butter, and honey. Using a hand mixer with a dough hook or a food processor, mix thoroughly for about 6-10 minutes until the dough pulls away from the sides of the bowl. Then let the dough rest in a warm place for 1 hour. Knead the dough on a floured surface and place it in a floured loaf pan. Lightly moisten with a little water and briefly score with a sharp knife, lengthwise or crosswise, depending on your taste. Let the loaf pan with the dough rest in a warm place for another hour. Preheat the oven to 220°C (top/bottom heat). Place the pan with the dough on a wire rack on the second rack from the bottom and place a heat-resistant bowl of water on the bottom of the oven. After about 10 minutes, reduce the temperature to 180°C and bake for another 50 minutes. If the bread starts to get too brown, cover it with aluminum foil or baking paper. After 50 minutes, turn off the oven and cover the bread and bake for another 20-25 minutes. Once the baking time is up, remove the bread from the oven, let it cool slightly, and then remove it from the pan.
