Ingredients for 2 servings:
- 4 chicken schnitzels
- 2 m.-sized egg(s)
- 2 tbsp flour
- 2 tbsp breadcrumbs
- 2 tbsp hazelnuts, ground
- n. B. Sea salt from the mill
- n. B. Pepper, colorful from the mill
- 2 tbsp clarified butter
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes
Wash the chicken schnitzels and pat dry. Butterfly thicker pieces to make thinner and larger. Then place the schnitzels between cling film or a freezer bag. Season the schnitzels with freshly ground pepper and salt. Mix the ground hazelnuts with the breadcrumbs. Whisk the eggs. Create a breading grid of flour, beaten egg, and hazelnut breadcrumbs. First coat the schnitzels in flour and tap them off, then coat them in egg, and finally coat them in hazelnut breadcrumbs. Heat a pan with the clarified butter and fry the schnitzels until golden brown on all sides. Arrange and serve.
