Makes 25 cookies, easy to prepare. Warning! These cookies will be gone faster than you think.
Soften the butter and cream it with the sugar (using a mixer). Then beat in the eggs one at a time. Now add all the dry ingredients and fold them in (I knead the dough by hand; it’s a bit sticky at first, but it’s effective). Lastly, I always add the chocolate. 100g is a must, and then a little more each time, so the dough is nicely covered with chocolate. It’s best to shape the cookies with two teaspoons and place them on the baking sheet. They will spread a little, so please leave some space between them. Line the baking sheet with baking paper only. Place in a slightly preheated oven at around 175°C and bake for about 15 minutes. The time and heat settings vary depending on the appliance (I bake with conventional heat). When they are a nice golden brown, remove them. Make sure the cookies don’t get too dark. Snacking on the dough is allowed. It’s worth a sin.
