Ingredients for 4 servings:

  • 2 eggs, separated
  • 75 g sugar
  • 500 ml milk
  • 5 sheets of white gelatin
  • Water for soaking
  • 75 g hazelnuts, ground
  • 100 ml whipped cream

Instructions

Working time approx. 25 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 25 minutes

Beat the two egg yolks with the sugar until creamy. Slowly stir in the milk. Meanwhile, squeeze out the previously soaked gelatine and melt it over low heat according to the package instructions. Add 2-3 tablespoons of the egg-milk mixture to the gelatine, then slowly add the remaining mixture. Chill everything. Beat the two egg whites until stiff, then the cream. When the mixture begins to thicken, fold in the egg whites, cream, and hazelnuts. Pour the cream into molds and chill thoroughly.
