Hazelnut pudding

Ingredients for 3 servings:

  • 200 g hazelnuts
  • 600 ml milk
  • 60 g sugar
  • 80 g flour

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour 30 minutes

Briefly roast the hazelnuts in the oven until the skins come off and the nuts get a little color. Remove the skins and puree the nuts as finely as possible in a blender or with an immersion blender. If necessary, add a little of the milk at this point to make the nuts easier to puree. Then add the rest of the milk, the sugar, and the flour and mix well again until smooth. Pour the mixture through a sieve into a saucepan. Heat, stirring constantly, until the pudding develops a thick consistency. Be careful, stirring is very important to prevent it from burning. The pudding is now ready and can be poured into serving dishes. Then let the pudding cool for an hour. We like to decorate it with ground nuts.
