Ingredients for 1 servings:
- 1 cup oat flakes, fine
- 1 banana(s), ripe
- 1 egg(s)
- 60 ml milk
- 1 tsp, heaped cinnamon powder
- some butter for the pan

Mash the banana into a puree with a fork or immersion blender. Grind the oats into flour, ideally using a grain mill, but you can also use an immersion blender if needed. Combine all ingredients in a bowl. Blend until a smooth batter forms. Add a little butter to a small pan and fry the pancakes in batches until golden brown. This recipe yields about 2-3 pancakes per batch. A delicious side dish, this pancake recipe goes well with natural yogurt and fresh seasonal fruit. Alternatively, it’s also delicious with red fruit compote, quark, and sliced banana.
