Healthy, fluffy meatballs with quark

Ingredients for 4 servings:

  • 1 large onion(s)
  • 1 garlic clove(s)
  • 1 tsp marjoram
  • 3 tbsp oil
  • 250 g minced meat (mixed, chicken or turkey is fine)
  • 1 egg(s)
  • 1 tbsp low-fat curd cheese
  • 1 tsp mustard, medium hot
  • 1 tbsp oat flakes, fine
  • 1 tbsp edible bran (oat bran)
  • 1 tbsp edible bran (wheat bran)
  • 1 tbsp crème fraîche or sour cream
  • salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel and dice the onion, peel and press the garlic. Mix both with the marjoram and sauté in 1 tablespoon of oil until the onions are translucent. Then add all ingredients to a bowl and knead thoroughly. With wet hands, form about 4 meatballs and fry them in hot oil, first briefly at high heat and then at low heat for about 15 minutes, turning occasionally. Serve with a fresh, seasonal salad. The meatballs become very soft and tender. I always have to handle them carefully when turning them. This meat mixture also works well for a meatloaf.
