Healthy Nut and Coconut Nibble Snack

Ingredients
 

  • 200 g Almonds
  • 100 g Flaked hazelnuts or Flaked almonds
  • 70 g Coconut chips
  • 2 tsp Coconut oil
  • 2 tsp Ground vanilla or vanilla pulp from a pod
  • 100 g Raisins
  • 100 g Soft apricots

Instructions
 

  • Preheat the oven to 175 degrees top / bottom heat. In the meantime, melt the coconut oil in a saucepan over low heat. Stir in the ground vanilla.
  • Stir in the almonds, grated hazelnuts and coconut chips. Spread the mixture on a baking tray lined with baking paper and roast in the oven for about 15 minutes until golden brown, stirring everything through once or twice.
  • Dice the soft apricots and stir into the hot mixture with the raisins. Let cool down on the baking sheet for about 10 minutes.
  • The mixture is suitable for snacking on its own, or as a topping for muesli, overnight oats, etc.
