Healthy oriental salad with Turkish Lor Peynir

Ingredients for 4 servings:

  • 1 onion(s), finely diced
  • 4 spring onions, cut into fine rings
  • 1 bell pepper(s), diced
  • 4 large tomatoes
  • 1 cucumber(s), sliced
  • 250 g quark, Turkish (Lor Peynir) or feta cheese
  • 1 bunch parsley, flat
  • 2 tsp cumin
  • 2 tsp Pul Biber
  • 2 tsp oregano
  • 2 tsp thyme
  • 1 tsp sumac
  • 1 lemon(s), juice
  • 4 tbsp olive oil, high quality
  • n. B. salt and pepper, black

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

delicious, protein-rich and easy

Finely chop the vegetables, starting with the onions. Now mix the cheese with the onions and spices (except the sumac) and set aside. This allows the flavor to fully infuse and develop. Chop the remaining vegetables and stir in. Make sure the parsley is flat-leaf. Mix together a dressing from the oil and lemon juice, or mix it directly into the salad. It’s best to use freshly ground pepper. Be careful with the salt if using feta cheese. Regarding the cheese: using Lor Peynir has the advantage of being high in protein (>20%) and low in fat.
