For the dough, combine the nut butter, flour, and 2 tablespoons of agave or maple syrup in a bowl and mix until smooth. Spread this mixture onto baking paper, slightly thinner than a finger’s thickness, and place in the freezer for one hour. For the filling, place the dates, 1 tablespoon of coconut oil, and a little vanilla in a blender and blend until smooth. If the blender is less powerful, you can let the dates soak overnight. Pour everything onto the dough along with a few nuts. Now cut the dough into pieces. While you prepare the coating, refrigerate the dough with the filling. For the coating, melt the remaining coconut oil a little. Then remove from the heat, add the cocoa powder and the remaining agave syrup, and mix everything together. Pour the melted chocolate over the bars and place them back in the freezer. The bars should be left in the freezer for storage, as otherwise the dough won’t be firm enough.
