Ingredients for 4 servings:
- 1 tbsp oil
- 250 g minced meat, mixed or of your choice
- 1 stalk(s) leek, cut into rings
- 1 m.-large onion(s), diced
- 1 liter of water
- 1 tsp vegetable stock powder
- 5 potatoes, diced
- 3 carrots, sliced
- ½ head of broccoli, cut into small florets
- 1 pack of processed cheese, approx. 200 g
- 1 tsp salt
- n. B. Pfeffer
- e.g. paprika powder
- n. B. Curry powder, variety according to taste
Instructions
Working time approx. 25 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes
Heat the oil in a large pot. Add the minced meat, season lightly with salt, and fry with a little curry powder. Once the minced meat is lightly browned, add the diced onion and leek rings and fry for about 3-5 minutes. Set aside. In a separate pot, bring 1 liter of water and the vegetable stock powder to a boil. Add the potatoes, carrots, and broccoli and simmer for about 10 minutes, until the vegetables are almost tender. Add the minced meat mixture to the vegetables in the pot and stir well. Add the cream cheese and stir until completely melted and the soup reaches a creamy consistency. Finally, season to taste with salt, pepper, paprika, and more curry powder, if desired. Tip: Fresh herbs like parsley or chives make a great garnish! Approx. 300 kcal per serving.
