Oatmeal cookies

Ingredients for 1 servings:

  • 125 g butter, soft
  • 75 g sugar
  • 75 g cane sugar
  • 2 packets of vanilla sugar
  • 1 egg(s)
  • 100 g wholemeal spelt flour
  • 1 tsp, heaped baking powder
  • n. B. Cinnamon powder
  • 250 g oat flakes, wholegrain
  • 3 tbsp oat milk (oat drink)
  • 50 g chocolate drops or chocolate flakes

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 14 minutes; Total time approx. 29 minutes

Cream the softened butter with the three types of sugar and the egg. Mix the flour with the baking powder and cinnamon powder and add to the mixture. Briefly mix everything together and finally add the oats, oat milk and chocolate chips or flakes. Mix well and let stand for at least 30 minutes. Place a baking sheet on the baking sheet and preheat the oven to 175°C fan/convection oven. With wet hands, place walnut-sized mounds of dough on the baking sheet, gently flattening them with some space between them. Bake for about 14 minutes on the middle rack (depending on the oven!). The edges of the cookies should be lightly browned. They will be quite soft at first but will firm up once they have cooled completely. Note: You can easily replace half the sugar with sweeteners, but using only sugar substitutes will alter the flavor too much. This recipe yields 36-40 cookies. Per cookie: about 48 kcal.
