Hearty Nuremberg sausage slices

Ingredients for 2 servings:

  • 2 slice(s) bread(s), whole grain
  • 2 tsp mustard
  • 8 small sausages (Nuremberg sausages)
  • 100 g sauerkraut, cooked
  • 2 slices of ham (smoked ham) or bacon
  • 2 eggs
  • some salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

with fried egg, sauerkraut, ham and mustard

Heat a pan and fry the sausages until nicely browned. Meanwhile, add the ham slices and fry until crispy. Meanwhile, heat the sauerkraut. Toast the bread, let it cool slightly (so it doesn’t go soft), and spread the mustard on the bread. You’ll have to try the variety you like best—I used a mix of sweet Bavarian mustard and medium-hot table mustard. Remove the sausages and ham from the pan and let them drain on a paper towel. Crack the eggs into the hot pan and cook as usual. Don’t forget to season with salt and pepper. While the eggs are cooking, top the bread. First, place the ham on top of the mustard. Then add the sauerkraut, the sausages, and last but not least, the fresh eggs.
