Hearty Turnip Pulp

Hearty turnip pulp

  • 2 Carrots (leftovers)
  • 2 piece Potatoes
  • 1 Onion
  • 1 Turnip (small)
  • 4 Discs Kasseler
  • Rapeseed oil to taste
  • 250 ml Vegetable broth
  • Salt, gourmet pepper, nutmeg to taste
  • Parsley from our own garden to your taste
  1. Peel and chop the carrots and potatoes. Peel the onion and place in a lightning chopper, chop finely. Wash and peel the turnip as well and cut into large pieces. Take a saucepan, heat rapeseed oil in it and add all the vegetables and steam them in them.
  2. Then deglaze the whole thing with the vegetable stock. Take Kassel slices and place them on top. Now cook (about 20 minutes) until everything is cooked through / soft. Then remove the cooked Kassel slices and mash the rest in the pot. Season with salt, gourmet pepper and nutmeg, season to taste. Cut a slice of Kassel into cubes and fold in.
  3. Then stir vigorously and take flat plates. Top with smoked pork and the hearty turnip pulp. Chop the parsley, sprinkle on top and serve immediately.
