Ingredients for 2 servings:
- 400 g potatoes, floury
- 1 bay leaf
- 150 g apple compote
- 1 onion(s)
- 125 ml milk
- 25 g butter
- 1 pinch(s) nutmeg, freshly grated
- 1 tbsp breadcrumbs
- 100 g black pudding
- bunch of parsley
- Salt
- oil
- some fat for the mold
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 50 minutes
Peel the potatoes and boil them with salt and a bay leaf until soft. Drain the cooking water and mash them with milk and half of the butter. Season with nutmeg. Preheat the oven to 200°C. Melt the remaining butter and stir in the breadcrumbs. Slice the onion into rings and fry in a little oil. Layer the mashed potatoes and apple compote in a greased baking dish, arrange the black pudding slices on top, and scatter the onion rings and toasted breadcrumbs over the top. Bake for 15 minutes. Sprinkle with chopped parsley.
