Ingredients for 12 servings:
- 6 small apples, tart (e.g. Boskoop or Elstar, approx. 700 g)
- 3 m.-sized eggs
- 150 g sugar
- 1 packet of vanilla sugar (bourbon vanilla sugar)
- 200 g cream
- 1 tbsp lemon juice
- 300 g flour
- 1 packet of baking powder
- 1 pinch of salt
- 2 tbsp cocoa powder
- 50 g chocolate (35 or 46% cocoa)
- 4 tbsp sugar

heavenly light cake with a wonderful combination of apple and chocolate
Grease a 26 cm springform pan well and lightly dust the bottom with breadcrumbs. Preheat the oven to 180°C (top/bottom heat). Core and peel the apples, then cut them into small pieces. Set aside the pieces of 3 of the 6 apples in a separate bowl. Melt the chocolate in a water bath. Beat the eggs, sugar, and vanilla sugar until frothy. Then stir in the cream and lemon juice well. Briefly mix the flour, baking powder, and salt in a separate bowl and then briefly stir into the remaining mixture. Then briefly stir in the cocoa powder and melted chocolate. Finally, fold in half of the apple pieces (from 3 apples). Pour the batter into the prepared springform pan. Cover the surface of the batter with the reserved apple pieces. Then sprinkle the cake with another 2-4 tablespoons of sugar. Bake the cake for 45-50 minutes (use a toothpick to check if it’s done!) and then let it cool.
