Ingredients
 

  • 100 g Sugar
  • 100 ml Mild balsamic vinegar
  • 30 g Dark chocolate
  • 1 tsp Mustard
  • 1 pinch Salt
  • 1 pinch Pepper
  • 1 Endive salad
  • 4 Pears
  • 150 g Blue cheese
  • 10 g Walnuts

Instructions
 

  • For the dressing, mix the sugar and balsamic vinegar in a saucepan and let it heat while stirring until the sugar has completely melted. Let simmer for about 5 minutes.
  • Remove the saucepan from the plate and let the sauce cool down for approx. 15 minutes until the sauce has a temperature of approx. 30 ° C, otherwise the chocolate will curdle. Finely chop the chocolate. Now add the chocolate, mustard, salt and pepper to the dressing and season to taste.
  • Wash the lettuce, spin dry, pluck it into small pieces and distribute on 5 plates. Wash, peel and quarter the pears, remove the core and cut into slices. Break the cheese into small pieces, roughly chop the walnuts and spread everything over the salad. Now drizzle with the dressing.
