Hello Kitty Cookies

- 320 g Flour
- 100 g Sugar
- 1 tbsp Vanilla sugar
- Grated lemon peel of an organic lemon
- 200 g Cold butter
- 1 Egg
- 1 Protein
- 1 pinch Salt
- 230 g Powdered sugar
- Lemon juice
- Food coloring
- Sift the flour through the Rucki – Zucki onto the dough base and make a well in the flour. Scatter sugar, vanilla sugar, lemon zest and butter cut into pieces in the hollow. Let the egg slide into the middle.
- Mix everything thoroughly. Press the dough together with cool hands rather than knead it. Chill the dough (preferably flattened) for 1-2 hours.
- Roll out the dough about 6 mm thick with the rolling pin (this will make the Hello Kitty contour clearest) and cut out cookies. Place these on a baking sheet lined with baking paper. Bake in a preheated oven at 200 ° C top / bottom heat for approx. 10 – 12 minutes and allow to cool.
- Beat the egg whites with salt in the Speedy Chef until frothy. Sift in the sifted powdered sugar and continue to beat everything until peaks form (takes 2 – 3 minutes). For writing, mix the glaze with a little lemon juice and possibly some food coloring. To coat the cookies, dilute the glaze further with lemon juice.
