Ingredients for 1 servings:
- 300 g flour (spelt flour), stir in tablespoon by tablespoon
- ½ sachet baking powder, sifted
- 250 ml milk
- 1 shot of mineral water
- 2 eggs, whisked
- salt, pepper
- 170 g cheese (Gouda, young), grated
- ½ tsp turmeric
- 1 tsp Ajvar (mild)
- 1 pinch(s) chili flakes, ground
- 2 leaves of sage (small, dried), ground
- 1 pinch(s) thyme, ground, dried
- 1 pinch(s) basil, crushed, dried
- 1 pinch(s) oregano, ground, dried
- 70 g Pecorino cheese (mild Italian sheep cheese, hard), grated, optional or
- 70 g Parmesan (Parmesano Regiano, mild), grated
- 1 tbsp mascarpone
- 1 tbsp sour cream
- some milk
- some salt and pepper

Mix all ingredients except the cheese and soda until you have a smooth batter. Stir in the grated cheese, season the batter to taste, and stir in the soda (this makes the batter even lighter). Lightly grease the waffle iron and preheat it; it should change from red to green (ours did, other waffle irons have different procedures). Pour 2 tablespoons of batter into the waffle iron and spread it out, close the iron, and bake the waffle until golden brown (1 should change from red to green). Repeat with the remaining batter. This makes about 11 waffles. While the waffles are baking (if desired), mix the sauce and serve with the still slightly warm waffles.
