Herb butter – salmon in aluminum foil

Ingredients for 2 servings:

  • 360 g salmon fillet(s) with skin
  • 2 pieces of herb butter
  • e.g. salt and pepper
  • e.g. lemon juice

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Wash the salmon fillet, pat dry, cut into two pieces, and debone. Place skin-side down on a piece of aluminum foil. Drizzle with lemon juice, salt, and pepper. Spread 1-2 pieces of herb butter on each salmon, if desired. Seal the aluminum foil (forming small parcels). Place in an oven preheated to 180°C for approximately 20-25 minutes. Serve with rice, baguette, or a green salad. You can also place the parcels on the grill. We don’t eat the skin; we scrape off the salmon. I buy salmon with the skin, though, because it doesn’t fall apart.
