Ingredients for 4 servings:

  • 1 cup sour cream
  • 1 cup of quark
  • 4 cloves garlic
  • some parsley
  • some chives
  • Salt
  • Seasoning salt (lemon salt)
  • ½ small onion(s)
  • 2 pinches of sugar
  • 1 tbsp rapeseed oil

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Finely chop the chives and parsley. Place the onion, garlic, and oil in a bowl. Puree using a hand blender until smooth. Now add the sour cream, quark, salt, sugar, lemon salt, chives, parsley, and garlic and onion puree to a bowl. Mix well. Either by hand or with a hand mixer, but preferably only on the lowest speed. You can, of course, increase the amount of salt to taste. I wouldn’t recommend pepper, as the lemon salt contains crushed black pepper. I recommend rapeseed oil, as it has a neutral flavor. Other oils can alter the final flavor. It’s best to make the quark 1-2 hours before serving, as this allows the flavor to develop.
