Ingredients for 6 servings:

  • 2 kg potatoes, floury
  • 3 tsp salt
  • ½ bunch parsley, flat
  • ½ bunch chives
  • 625 ml milk
  • n. B. Salt
  • e.g. nutmeg, freshly grated

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Wash and peel the potatoes thoroughly, and cut into pieces (quarters or eighths depending on their size). Place the pieces in a pot and cover with water. Add three teaspoons of salt and bring to a boil, then simmer for ten to 15 minutes. Wash the parsley and chives, shake dry, and finely chop or cut into rings. Drain the potatoes in a sieve. Rinse the potato pot and heat the milk in it. Add plenty of salt, nutmeg, parsley, and chives to the milk. Remove the pot from the heat, add the potato pieces in batches, and mash them in the milk.
