Herb potato salad with salmon

Ingredients for 4 servings:

  • 1 kg potato(s), waxy
  • 1 onion(s)
  • ½ bunch parsley
  • ½ bunch chives
  • ½ bunch of dill
  • 3 tbsp vinegar (herb vinegar)
  • 1 tbsp lemon juice
  • salt and pepper
  • Sugar
  • 200 g smoked salmon

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Wash the potatoes and cook in boiling water for about 20 minutes. Meanwhile, peel and finely chop the onions. Wash the herbs and pat dry. Finely chop the parsley and dill, and finely chop the chives. Mix together the vinegar, lemon juice, salt, pepper, and sugar. Whisk in the oil and add the herbs. Drain the potatoes, rinse in cold water, and peel. Slice the potatoes. Pour the herb vinaigrette over the potatoes and mix. Let the salad stand for about 30 minutes and serve with the salmon. Garnish with the remaining parsley.
