Ingredients for 4 servings:

  • 250 g spelt flour type 630
  • ½ tsp salt
  • 1 tsp turmeric
  • 1 pinch of pepper
  • 2 eggs
  • n. B. salt water
  • 1 handful of ground elder, chopped

Instructions

Working time approx. 10 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 50 minutes

Place the flour in a bowl and mix with salt, turmeric, and pepper. Crack the eggs and add them. Mix everything well with a wooden spoon. Now carefully add water until the batter bubbles when beaten. Stir in the chopped ground elder and let the batter rest for at least half an hour. Bring the water to a boil, add salt, and press or slice the batter into the water. As soon as the spaetzle float to the top, they’re ready.
