Ingredients for 4 servings:

  • 500 g Flour Type 550
  • 1 tsp salt
  • 5 eggs
  • 1 bunch basil, chopped
  • 200 ml water, warm

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Combine flour, eggs, herbs, and salt with 200 ml of lukewarm water. Knead the dough with a hand mixer or, more traditionally, with a wooden spoon. Boil enough water (1.5 liters) with 1 teaspoon of salt and press the spaetzle into the water using a spaetzle press. Scrape off the excess water with a knife and remove the spaetzle with a slotted spoon as they rise to the surface. Spread the spaetzle on a large, flat plate to prevent clumping. You can also use other herbs instead of basil.
