Ingredients for 1 servings:

  • ½ pack of mixed herbs, frozen
  • 25 g butter
  • 2 eggs, separated
  • Salt
  • 50 g flour
  • 25 g cornstarch
  • 1 tbsp cheese (Emmental), grated
  • Fat and breadcrumbs for the mold

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

for approx. 1 ¼ l broth

Thaw the herbs, melt the butter, but do not brown it. Beat the egg whites with salt until stiff. Alternately mix in the egg yolks, herbs, and a spoonful of melted butter. Mix the flour, cornstarch, and cheese and fold in with a whisk. Grease the bottom of a low-sided ovenproof dish and sprinkle with breadcrumbs. Smooth the batter into the dish. Place the dish in a cold oven and bake at 180°C (160°C fan-assisted oven) for about 25 minutes, until lightly browned on top and cooked through. Allow to cool slightly, cut into diamond shapes, and serve in the hot broth.
