Herring salad as a snack on bread

Ingredients for 4 servings:

  • 1 pack of herring fillet(s)
  • 5 gherkins
  • 1 small onion(s)
  • 3 tbsp cucumber water
  • 3 tbsp oil

Working time approx. 10 minutes; Rest period approx. 1 day; Total time approx. 1 day 10 minutes

simple, quick and delicious

The herring fillets are cut into 1 x 1 cm cubes and placed in a bowl. Then the cucumbers and onion are finely chopped and also added to the bowl. I always use a kitchen aid for chopping them, as I like the cucumbers to be very small. Finally, the cucumber juice and oil are added and everything is mixed well. I prepare it the day before if possible, as it can still marinate after a night in the fridge. But it tastes great even after an hour. My children and I love to eat it for dinner on mixed bread. At parties, however, it belongs on baguette, rolls, or slices of white bread.
